Mahlepi, also known as Mahlab or Prunus mahaleb (scientifically called mahaleb cherry), is an aromatic spice made from the seeds of the cherry species Prunus mahaleb (also called the Mahaleb cherry or St. Lucie cherry). It has been used for centuries in the Middle East and surrounding regions, including Turkey, Syria, Egypt, Armenia, Iran, and traditionally in Greece. It resembles a small almond with a bitter, cherry-like aroma reminiscent of orange blossom. The tree is native to Central and Southern Europe and North Africa, but its range extends into Central Asia. It is used for its cosmetic properties, as a spice, herb, dye, firewood, in crafts, and in the preparation of alcoholic beverages. However, its use is most common in baking. It would be a shame to limit its use to only sweet recipes. You can sprinkle it on stir-fried vegetables or creamy soups, rice and especially on dishes made with carrots or pumpkin.

Il ressemble à une petite amande au parfum d'amer et de cerise avec des fleurs d'oranger. L'arbre est originaire d'Europe centrale et méridionale et d'Afrique du Nord, mais il atteint l'Asie centrale. Il est utilisé pour ses propriétés cosmétiques, telles que l'épice, l'herbe, la teinture, le bois de chauffage, l'artisanat et pour la préparation de boissons alcoolisées. Cependant, son utilisation est plus courante en pâtisserie. Il serait dommage de ne l'utiliser que dans des recettes sucrées.
