El Miradoris the farm of Elkin Guzman, whose family has been producing coffee for over 70 years. The farm has been operating for over 12 years, dedicated primarily to researching processing technologies. El Mirador is located in the village of El Portal, within the Pompeii reserve in the Magdalena River Valley, and covers an area of 32 hectares. The farm is renowned for its exotic coffee varieties, including Catiope, Mokka, Tabi, Geisha, and Orange.

Natural Acetic Fermentation Process:The coffee beans are placed in plastic containers and filled with water. This environment supports the growth of acetobacteria at temperatures up to 1 C during fermentation, which takes between 240 and 290 hours. The coffee beans are dried for 25 to 30 days, until they are dry and their moisture content reaches 0.5 . Finally, the coffee beans are dehulled and packaged in Grainpro bags for export.

Natural Asetik Fermentasyon Süreci:Kahveler plastik haznelere yerlestirilip suyla doldurulur. Bu ortam, 240 ile 290 saat arasinda süren fermentasyon sirasinda 1 dereceye kadar asetobakterlerin gelisimini destekler. Kahveler, kuruyana ve nem içerigi .5 ile olana kadar 25 ile 30 gün boyunca kurutulur. Son olarak, kahveler kabuk soyma makinesinden geçirilir ve Grainpro torbalarda paketlenerek ihracata gönderilir.
