What is coconut milk? Coconut milk comes from the flesh of mature brown coconuts, which are the fruit of the coconut tree. The milk has a thick and creamy texture and is often used in Thai and other Asian cuisines. Coconut milk is quite different from coconut water. Coconut water occurs naturally in young coconuts, while coconut milk does not occur naturally in the coconut itself. The flesh must first be mixed with water to make coconut milk. While long-chain fatty acids first pass through the lymphatic system before being absorbed, medium-chain fatty acids (MCTs) are absorbed directly into the bloodstream via the intestines. MCTs are therefore more readily available as nutrients than long-chain fatty acids. Their energy can therefore be quickly used by the body.
