It is obtained by stone-milling the seeds of quinoa (Chenopodium quinoa), a plant native to South America, belonging to the same family as spinach and beets. It is mostly cultivated, but has also grown wild for thousands of years in the Andes, the mountain range of South America. Quinoa seeds are similar in shape to lentils and have a pleasant, intense aroma (which they naturally impart to the flour). They require thorough cleaning before processing to remove saponin, a bitter substance. Nutritionally, quinoa is an almost complete food, with a very high content of high biological value and almost complete proteins. In particular, it is rich in lysine, an amino acid lacking in grains. Quinoa contains mainly low-glycemic index carbohydrates, fats, and minerals (in descending order): potassium, phosphorus, magnesium, calcium, selenium, iron, zinc, and copper. Directions for use: It can be used at 20 to 30 with gluten-producing flour (spelt, wheat, and Kamut) to prepare any sweet or savory baked product. DESCRIPTION DU PRODUIT Si ottiene dalla lavorazione a pietra dei semi della quinoa (Chenopodium quinoa), una pianta originaria del Sud America, appartenente alla stessa famiglia degli spinaci e delle barbabietole. Viene per lo più coltivata, ma cresce anche spontaneamente da migliaia di anni sulle Ande, la catena montuosa dell' America meridionale. I semi di quinoa hanno un forma simile alle lenticchie e un profumo gradevole e intenso (che conferiscono ovviamente alla farina), necessitano di un'accurata pulizia prima di essere lavorati, per eliminare la saponina, una sostanza amara. Da un punto di vista nutrizionale la quinoa è un alimento quasi completo, ha un contenuto molto elevato di proteine ad alto valore biologico e quasi complete. In particolare è ricca di lisina, un amminoacido carente nei cereali. La quinoa contiene prevalentemente carboidrati a basso indice glicemico, grassi e sali minerali (in ordine decrescente): potassio, fosforo, magnesio, calcio, selenio, ferro, zinco e rame. Modalità d'uso: S'impiega dal 20 al 30 con farina che genera glutine (farro, frumento e Kamut) per la preparazione di qualunque prodotto da forno dolce e salato.
