This coffee is grown in the Djimmah region (known as Jimma in Ethiopia) in the southwestern part of the country. The town of Djimmah is physically quite small, but the population in the region makes it one of the most densely populated areas in Ethiopia after Addis Ababa. Djimmah coffee represents the majority of Ethiopia's coffee exports, accounting for almost 50 of the total. It is a coffee prized primarily for its strong acidity and body.
Contrary to popular belief and knowledge, Djimmah is an area with numerous indigenous forest varieties from which excellent coffee varieties originate. Most coffee is grown in dense forests, and some lesser-known specialty coffees can be found. Its clean cup and good flavor make it superior to other African unwashed Arabicas. Most Djimmah coffee comes from the Illubabor region, at an altitude of 1,750-2,000 meters.
The environment is generally shade-grown at high altitudes, requiring no chemical inputs thanks to the rich soil and absence of pests. Ethiopians generally believe in cultivating coffee in balance with the soil, resisting the demands of intensive cultivation and yields requiring fertilizers and other artificial controls. Djimmah coffee is hand-selected and traditionally dry-processed (naturally).
