Nova Vera Early Harvest Trilye is produced by harvesting Trilye olives, grown in our groves at an altitude of 600 m in Salihli, Manisa, without any damage, by hand, through a cold chain, and then transporting them to Ayvalik. They are then cold-pressed in Nova Vera Ayvalik facilities, which hold BRC and ISO 22000 certifications.
The free fatty acid value is at most 0.2 .
At all stages, from olives to olive oil, temperature measurements are taken at six points to ensure the paste remains below 22 C. Early harvest and cold-press processing principles are strictly applied to ensure the highest levels of phenolic compounds, naturally found in olive fruit, are transferred into the olive oil.
The olive oil you taste should evoke freshness and make you feel happy. Furthermore, when you inhale while a little olive oil is in your mouth, you should feel a burning sensation in your throat and nasal passages. These grassy odors, bitterness, and pungency are due to the phenolic compounds in your olive oil and indicate its rich antioxidant capacity.
All products produced at Nova Vera are stored in specially air-conditioned warehouses at a maximum temperature of 18 C - 20 C.
Trilye Early Harvest Olive Oil is characterized by fresh grass, artichoke, tomato leaves, arugula, and fresh green herbs.
