Sahlep is obtained by pulverizing the tubers of an orchid species. Sahlep was widely used, especially in countries ruled by the Ottoman Empire. It was consumed mixed with milk and cooked, or added to ice cream and desserts for its unique flavor and binding properties. Mountain sahlep, unlike mountain sahlep, is a species grown in mountainous regions. The flavor of the famous Kahramanmaras ice cream comes from the mountain sahlep, which grows only in Kahramanmaras and Kastamonu.
