How is Sourdough Starter Feeded? |
When the sourdough starter is delivered, it must be fed for the first time. Scrape all the starter into a deep, covered bowl. Add 75 grams of flour and 35 grams of water. Mix well with a wooden spoon. Close the lid. Leave to ferment at room temperature (22 C -25 C) for 18-24 hours. A second feeding should be made after 24 hours. Because the yeast's weight increases with each feeding, weigh the yeast. Add half the amount of flour and half the amount of water to the yeast, mix as for the first feeding, and let it ferment at room temperature. If the yeast is fed without interruption for 3 days, it will grow very quickly and become stronger. |
Things to Consider? |
Sourdough is fed only at room temperature. Once the sourdough has multiplied, it is stored in the refrigerator (for 10 days). At the end of this period, it is brought to room temperature. After it has come to its own temperature for 1-2 hours, it is fed and then returned to the refrigerator. In this way, the yeast's activity continues for many years. The sourdough is used to make bread 6-8 hours after being fed. |
