Organic Siyez (Kaplica) Wheat, grown in a controlled environment in Kastamonu, is ground in its pure form in our stone mill without removing the bran and germ.
How is Sourdough Starter Feeded?
When the sourdough starter is delivered, it must be fed for the first time. Scrape all the starter into a deep, covered bowl. Add 75 grams of flour and 35 grams of water. Mix well with a wooden spoon. Close the lid. Leave to ferment at room temperature (22 C -25 C) for 18-24 hours. A second feeding should be made after 24 hours. Because the yeast's weight increases with each feeding, weigh the yeast. Add half the amount of flour and half the amount of water to the yeast, mix as for the first feeding, and let it ferment at room temperature. If the yeast is fed without interruption for 3 days, it will grow very quickly and become stronger.
Things to Consider?
Sourdough is fed only at room temperature. Once the sourdough has multiplied, it is stored in the refrigerator (for 10 days). At the end of this period, it is brought to room temperature. After it has come to its own temperature for 1-2 hours, it is fed and then returned to the refrigerator. In this way, the yeast's activity continues for many years. The sourdough is used to make bread 6-8 hours after being fed.
Sunlight or high room temperature environments are not suitable for storage.
Can be used as a supplementary food for babies aged 7 months and older.

Eksi Hamur Mayasi Nasil Beslenir?
Eksi maya teslim edildigi zaman ilk beslemesi mutlaka yapilmalidir. Mayanin hepsi derin kapakli bir kaba siyrilir. Üzerine 75 gram un ve 35 gram su eklenir. Tahta kasik ile iyice karistirilir. Kapak kapatilir. Oda sicakliginda (22 C -25 C) fermente olmasi (18-24 saat) beklenir. 24 saat sonra ikinci besleme yapilmalidir. Mayanin agirligi her beslemede artacagi için maya tartilir. Mayanin yarisi kadar un, unun yarisi kadar su eklenir ve ilk beslemede oldugu gibi karistirilip oda sicakliginda fermentesi beklenir. Maya 3 gün boyunca hiç aksatilmadan beslenirse çok hizli büyür ve güçlenir.
Dikkat Edilmesi Gerekenler?
Eksi mayanin beslenmesi sadece oda sicakliginda yapilir. Eksi maya çogaldigi zaman buzdolabinda (10 gün) muhafaza edilir. Süre sonunda oda sicakligina çikarilir. 1-2 saat kendi isisina geldikten sonra beslenir ve yine buzdolabina kaldirilir. Bu sekilde mayanin aktifligi uzun yillar devam eder. Eksi maya beslendikten 6-8 saat sonra ekmek yapmak için kullanilir.
Günes alan, yüksek oda sicakligina sahip ortamlar saklama kosullari için uygun degildir.
7 ay bebekler için ek gida olarak kullanilabilir.
