The raw materials are produced by the historic company of the Mascolo family which has always been dedicated to agriculture and which has its headquarters in Puglia, Southern Italy. Like other ancient grains it is very rustic, it resists cryptogams and environmental stress well, it also has a very tall growth habit that suffocates weeds, allowing cultivation without chemicals. Poor in essential amino acids, it is a good source of vitamins (groups A, B, C, E) and mineral salts: calcium, phosphorus, sodium, magnesium and potassium. It is a good source of protein and iron and contains a lot of
fiber. Its peculiarity lies in the selenium content which counteracts the action of free radicals. The stone decortication allows to have a product with ancient fragrances and flavours. Spelled goes well with vegetables and can be used in recipes to replace rice, for example, to prepare farrotti or rich fillings for tomatoes, peppers or other vegetables. During the hot season it is the ideal ingredient for tasty salads, while in winter is perfect for soups and soups. It is also perfect for replacing pasta in soups. We only use ancient cereals (not genetically manipulated) from the farm which have a less structured gluten and are suitable for those with hypersensitivity to gluten (not celiacs).
