Edremit olives are carefully picked while green in October and November. They are sorted, selected, and washed in screening machines. After the scratching process, they are placed in wide-mouthed olive tanks. They are filled to the brim with drinking water and the lids are closed. They remain in their own water for 60-65 days and then the water is changed. After remaining in the second water for 15-20 days, the water is changed again to remove the initial bitterness of the olives. Third, a brine prepared with a mixture of salt and citric acid is poured over the olives and left to ferment naturally. Approximately every 15 days, the olives are circulated to maintain the salt balance, and they reach eating maturity in approximately six months. The ripe olives are removed from the brine, bruised olives are removed, and washed. A mixture of salt and citric acid, prepared as a permanent brine, is poured over the olives, which are then packaged.

Green olives, especially consumed for breakfast, have liver-cleansing properties.

Green olives are very important for metabolism because they contain plenty of vitamin D. They contribute to the development of the body in children.

Ekim-Kasim aylarinda Edremit cinsi zeytin yesil iken özenle toplanir. Eleme makinalarinda boylanir, seçilir ve yikanir. Çizme islemi yapildiktan sonra agzi genis zeytin tanklarina konur. Agizlarina kadar içme suyu ile doldurulup kapaklari kapatilir. Kendi suyunda 60-65 gün kalir ve suyu degistirilir. Ikinci suda yine 15-20 gün kaldiktan sonra tekrar su degisimi yapilarak zeytinin ön aciligi alinir. Üçüncü olarak tuz ve limontuzu karisimiyla hazirlanan salamura suyu dökülür ve dogal fermantasyona birakilir. Yaklasik 15 günde bir tuz dengesi için sirkülasyon yapilir ve yaklasik 6 ay içerisinde zeytin yeme olgunluguna erisir. Olgunlasan zeytinler salamuradan çikarilir, ezik taneler ayiklanir ve yikanir. Ambalajlara konan zeytinlerin üzerlerine kalici salamura suyu olarak hazirlanan tuz ve limontuzu karisimi dökülür.

Özellikle sabah kahvaltilarinda tüketilen yesil zeytinin karacigeri temizleme özelligi vardir.

D vitaminini bol miktarda içerdigi için yesil zeytin, metabolizma açisindan çok önemlidir. Çocuklarda bünyenin gelismesine katki saglar.
