Menengiç, the main plant of menengiç coffee, is a type of pistachio tree that grows wild in the highlands of Southeastern Anatolia, Central Anatolia, and the Mediterranean region of Turkey. Known as pictacia perebinthus in Latin, this plant, sometimes called "çitlembik", "çitlik", "bittim", and "çedene" depending on the region where it is grown, grows slowly and can reach a maximum height of 10 meters. Although it grows in all soil types, it yields best in dry, soft soil.
- Pistacia terebinthus blooms red and matures to a blue purple color. The ripe terebinths are collected, washed, and then dried. After drying, the roasting process begins, just like coffee, until they attain a dark brown color. After roasting regular coffee, the roasted terebinths are crushed until they form a paste. The resulting oily, grainy paste is called terebinthus coffee.
