With a flavor somewhere between thyme and very light mint, çibrisa's name comes from Thrace. In other parts of the country, it's also known as sater or mermek herb. Just like its distant cousin, thyme, it enhances the flavor of its ingredients and adds health benefits. It's also drunk as a tea due to its antiseptic and antiviral properties, but it's most commonly enjoyed sprinkled in oil and dipped in toast for breakfast.
