Taglierini is a type of fresh pasta (pasta fresca all'uovo) cut into thin strips (from the Italian word "tagliare," meaning to cut). Fioritta Pasta Fresca's taglierini dough in Moscow is a crumb made by mixing two types of Italian durum wheat flour, fresh eggs, and purified water. The durum wheat imparts a nutty flavor to the pasta. The crumb is then rolled repeatedly between two large, powerful steel rollers in a special sheeting machine until it forms a silky-thin sheet. The dough is then cut into 2mm-wide strips.

Пшеница твердых сортов придает пасте ореховый привкус.
