Nisin is a natural preservative produced through fermentation using the Lactococcus lactis bacteria. It is registered as a food additive in Europe under the E234 registration number.
Nisin is a class of peptide compounds extracted from the fermentation product of Streptococcus lactis. It can effectively inhibit the growth and reproduction of Gram-positive bacteria that cause food spoilage, particularly heat-resistant bacillus, Clostridium botulinum, Listeria monocytogenes, and the spores they produce. It can be used in meat products, dairy products, and plant-based protein foods. Because nisin is a type of polypeptide, it is easily degraded by plant proteases after entering the human body. It is a safe, non-toxic, and effective natural food preservative.
