Antep pistachio,is a more refined version of everyone's favorite pistachio in terms of taste, quality, and yield. It is a very popular snack that has been consumed since 6750 BC. Its homeland is Central Asia and the Middle East. The reason for the Antep suffix is that Gaziantep is the first place of production. Almost a large portion of Turkey's production is in Southeastern Anatolia. It grows in Gaziantep, Sanliurfa, Nizip, Siirt, Kahramanmaras, Adiyaman, Diyarbakir, Karaman, and every region along the Göksu River. While Gaziantep has been the most important province for pistachio production for many years, since 2018, the largest production has been in Sanliurfa. These two provinces alone produce 3 of the country's pistachio production.

In this production, where the grafting method is used, the rootstocks are Menengiç, Battum, and Atlantic mastic. These trees, which can grow in all types of soil, are selective about climate. The desired climate is characterized by long, hot, and dry summers and cold winters. The orchard should have at least one female and one male tree to ensure reproduction through pollination. The most beautiful, large, and healthy peanuts on the tree are selected and separated. After harvest, the peanuts are sent to the factory, machine-hulled, and dried for 24-30 hours. They are stirred with rakes to speed drying. Peanuts are divided into two categories: shelled and snacks. If they are to be used as nuts, they are removed from their shells. If they are to be used as snacks, they are cracked and packaged.

Luxurious Pistachio Storage Conditions
It is not possible to keep fresh and healthy pistachios for a long time. They cannot be stored at room temperature because their reaction with air will darken the shell. Therefore, the refrigerator is generally the most suitable place to store fresh pistachios. Pistachios should be consumed within 15 days at most. To preserve them for a long time without spoiling, fresh pistachios should be dried in the sun for a while. After being luxuriously dried, pistachios retain their flavor and nutritional value for approximately 11-12 months, and can be consumed safely and without spoilage within this period. However, the most important factor for this one-year period is equal humidity and air circulation.
