Galaxy roasted chickpeais a very popular variety of roasted chickpea, a favorite snack that has been around since the 1370s. First produced by Sheikh Murat Gazi, roasted chickpea has maintained its place on our snack plates ever since. According to Evliya Çelebi's writings, it was very popular in Istanbul in the 17th century, even providing a source of income for nearly 400 people. Almost 180 years after Murat Gazi's death, an Albanian roasted chickpea master taught roasted chickpea to the Tavsanli people, and through this master-apprentice relationship, roasted chickpea has survived to this day. The first three places where roasted chickpea production is registered in our country are Çorum, Tavsanli, and Serinhisar.

After the humidification process, the chickpeas are baked again, completely removed from the shells with a tool called a mafrak, and they become roasted .

These nuts, which have a very low moisture content, require special care when storing them. These roasted chickpeas, which should preferably be purchased packaged, require care from the moment they are purchased open. Roasted chickpeas purchased open rather than in their packaging should not be placed in a plastic bag if they are, they should be left open. The healthiest way to store roasted chickpeas is in their original packaging. If they can't be stored in their original packaging, they should be stored in a glass container and, if possible, in the refrigerator, away from moisture and humidity. Roasted chickpeas that aren't stored as described above can react to humidity and humidity, causing them to harden and become moth-prone, making them unsuitable for consumption.
