A symbol of the succulent Sicilian culinary tradition, busiates are a pasta shape resembling thin, twisted tubes, a type of macaroni. The name is thought to derive from the "buso," a special knitting iron commonly used for knitting fabrics such as wool and cotton. However, the term could also refer to dung, specifically "disa," a grass native to the Mediterranean region that farmers once used to tie bundles of spices. Rustichella's Abruzzo busiates are made with timilia, one of the ancient wheat varieties that Rustichella is reviving to offer a healthier alternative to traditional meals. They are delicious with tomato sauce and fish sauce. INGREDIENTS Durum wheat semolina, concentrated beetroot juice powder 5 , chili pepper 0.8 . Contains gluten.

DESCRIPTION DU PRODUIT DESCRIPTION DU PRODUIT Symbole de la succulente tradition culinaire sicilienne, les busiates sont un format de pâte en forme de fines tubes torsadés sur eux-mêmes, une sorte de macaroni. Le nom serait attribuable au « buso », un fer à tricoter particulier qui était généralement utilisé pour tricoter des tissus tels que la laine et le coton. Mais le terme pourrait également se référer à la bouse, c'est-à-dire de la « disa », une graminée typique de la tache méditerranéenne que les paysans utilisaient anciennement pour attacher les faisceaux d'épics. Les busiates Rustichella des Abruzzes sont réalisées avec la timilie, l'une des variétés de blé ancien que Rustichella se propose de récupérer pour offrir une perspective plus saine que d'être à table. Ils se prêtent à être assaisonnés avec de la sauce tomate et des jus de poisson. INGRÉDIENTS Semoule de blé dur, jus concentré de betterave en poudre 5 , piment 0,8 . Contient du gluten.
