It is recognized by the Label Rouge and PGI (Protected Geographical Indication) labels and guaranteed by specific specifications. Its flavor is delicious. Preparation Instructions: Soak overnight in two and a half times their volume of cold water. After draining, bring to a boil in fresh water. Then cook over low heat for about one hour (30 minutes in a pressure cooker).
