Agar agar is a natural gelatin obtained from red algae with laxative and purifying action that grows on the Japanese and Californian coasts, a gelling agent used as a substitute for gelatins of animal origin. The product is used as a thickener and stabilizer in different types of food products: agar-agar is an excellent substitute for fish gelatin, compared to which it offers the advantage of having no aroma and leaving no aftertaste.
