Natural thickener (E417) obtained from the ground endosperm of the seeds of Caesalpinia spinosa, a plant of the legume family. Ideal for ice cream and sorbets, it also works cold. Tara seed flour can be used as a substitute for locust bean gum and guar gum. It also has good stability in freezing and thawing processes, with reduced water release: it is therefore indicated in the preparation of ice cream because it minimizes the formation of ice crystals. It is important to know that Tara gum does not cover the flavor, aroma or change the color of the food in which it is inserted (unlike other thickeners), but strengthens it. INGREDIENTS Powdered Tara GumThickens sauces and soups - reduces the formation of ice crystals in ice cream and sorbets. Thickening, stabilizing and gelling properties.
