ORIGIN

The Aricha processing station is located in the highlands of the Yrgacheffe region.

Small farmers from the surrounding area bring their harvest to the station.

Aricha serves approximately 650 local farmers.

At the station, staff manually sort the incoming batch to remove underripe, overripe, or damaged berries.

PROCESSING AND FERMENTATION

After picking and sorting, the coffee berries are depulped using a disc depulper, then the coffee is fermented for 12-18 hours.

After fermentation, the parchment is washed in clean water (in sorting channels) and transferred to African beds for drying.

Drying takes approximately 12-15 days (until the beans reach the optimal moisture level).

ПРОИСХОЖДЕНИЕ

Станция обработки Арича находится на высокогорье региона Иргачефф. Мелкие фермеры из окрестностей привозят свой урожай на станцию. Арича обслуживает около 650 местных фермеров. На станции сотрудники вручную сортируют поступившую партию, чтобы удалить недозрелые, перезрелые или поврежденные ягоды.

ОБРАБОТКА И ФЕРМЕНТАЦИЯ

После сбора и сортировки кофейные ягоды депульпируют при помощи дискового депульпатора, далее кофе ферментируют в течение 12-18 часов. После ферментации парчмент промывают в чистой воде (в сортировочных каналах) и переносят сушиться на африканские кровати. Сушка длится примерно 12-15 дней (до достижения оптимального уровня влажности зерен).
