Long before lemons reached Europe, the Romans imported sumac from Syria for use as an acidifying agent or for making dyes. This spice has flavored Middle Eastern cuisine since at least the 13th century in za'atar, a blend that also includes sesame seeds and other dried herbs. The use of sumac is primarily concentrated in Lebanon, Syria, Turkey, and Iran. It was almost impossible to find it anywhere other than the Middle East until the 1980s. Since then, this spice has become more widely available and has begun to travel, becoming incregly popular in the West.
