Rhus is a genus of trees or shrubs in the family Anacardiaceae, commonly known as sumacs in France, summaq in literary Arabic probably coming from Syriac and meaning "red". It is composed of about 125 species found in subtropical and temperate regions in many parts of the world.Prepared and packaged in France, resealable bag. It replaces lemon for all seafood cuisine. In addition to the famous "Sumac Trout", you can sprinkle it on your fish fillets in foil, and add a little crème fraîche! With this spice, we also prepare the famous Zaatar: a mixture based on lemon thyme, sesame seeds and sumac. This same zaatar is used in Lebanese, Iranian, Turkish, Greek, and now French cuisine. Sumac does not tolerate long cooking times it loses its flavor and offers too much acidity limit cooking times. Il se présente sous forme de poudre un peu onctueuse et humide. Légèrement acidulé, voire vinaigré, le sumac pétille dans la bouche et vous laissera quelques notes naturelles salées sur les papilles !. Le sumac ne supporte pas les cuissons longues, il perd en saveur et offre trop d'acidité, limiter les temps de cuisson.
