INSTRUCTIONS 1- Heat the water, do not boil. 70 C - 80 C is too hot to use and will make the mate very bitter. 2. Pour the yerba mate into the calabash until it's two-thirds full, place your hand on top, and shake it (mix the leaves and remove any powder). 3. Pour a little warm water over the yerba mate to moisten the leaves. This will help maintain a concentrated brew and prevent the leaves from burning. 4. Tilt the calabash, place the bombilla (metal straw) in the hollow, and sweeten gently (this will cause the bitterness of the first infusion). 5. Pour water into the hollow side of the calabash.
