PRODUCTION: A very traditional processing method involves, after initial withering outdoors, the leaves being heated in large woks to temperatures of around 180 C. TASTING NOTES: This tea has an intense flavor and a well-structured body. When tasting the infusion, you will primarily notice flavors of fresh peas and artichokes. GREEN TEA: The curved shape of the buds is due to the spring season during which it is harvested. The Chinese called it "que she" (sparrow's tongue) because of its resemblance to the language of birds.
