What we learned from visiting the Haiwan factory
The owner of the factory, Zou Bing Liang, is a member of the group that created Shu Pu'er in 1973.
He actively worked on the "wet stacking" technology, which is used to produce almost all Shu Pu'er on the market.
He worked as the chief technologist at the Menghai factory (now Da Yi Menghai), later becoming the general director.
In 1999, he retired, having created the tea giant – the Haiwan factory.
Zou Bing Liang is known for his method of blending raw materials, which has become the ideology of Haiwan tea craft.

Brewing methods

Мань Ган – место древнего чайного ремесла округа Линьцан.
Мань Ган расположился на западном берегу реки Ланьцанцзян, между склонами гор Да Сюэ Шань, и деревней Си Гуй. На диких каменистых выступах, растут старые деревья.
Сырьё из Мань Ган отличительно яркой игрой вкуса. При первом глотке происходит резкий скачок от цветочной терпкости к объёмной сладости в послевкусии.

Что мы узнали посетив фабрику Хайвань
Хозяин фабрики, Цзоу Бин Лян – участник группы, создавшей шу пуэр в 1973 году. Он активно работал над технологией “влажного скирдования”, по которой производится практически весь Шу пуэр на рынке. Работал главным технологом на Мэнхайской фабрике ( ныне – Да И Мэнхай ), впоследствии став генеральным директором.
В 1999 году ушёл на пенсию, создав чайного гиганта – фабрику Хайвань. Цзоу Бин Лян известен методом купажирования сырья, которое возведено в идеологию чайного ремесла Хайвань. Дословно - «используются сильные стороны и избегаются слабости. Мы перекрываем слабые качества – сильными. Балансируем высокое и низкое».
Блиц-факты:
-Собственные плантации. Процесс изготовления контролируется ещё до появления чайного листа

Способы заваривания
Метод пролива.
Понадобится – чайник, гайвань или типод. Дозировка.
Отмеряем нужное количество чая из расчёта пол-грамма на 10мл воды Пробуждение листа. Заливаем водой 90-100c и сразу же сливаем.
Первый пролив. Заливаем чай водой, закрываем крышку, настаиваем около 5сек и сливаем уже для употребления.
Раскрытие. С каждым проливом увеличиваем время настаивания на 2 сек.
