Origin

Assam, India The tea growing region of Assam in India is highly regarded for producing some of the best black teas in the world. The flavor profile of Assam is full-bodied and rich with malty undertones. Assam is one of the largest tea producing regions and it shares borders with China, Burma, and Bangladesh. The discovery of Assam tea is attributed to the Singhpow tribe in Northern Assam. They are known to be the earliest users of the tea plant as a medicinal herb and beverage.

Technique

After the newly sprouted leaves have been plucked, they are withered over warm air for a few hours to reduce moisture. Once a suitable suppleness is achieved in the leaves, a delicate rolling of the leaves is performed. The leaves begin to oxidize (change color from green to dark) and the flavor develops. Finally, the leaves are over baked.

Flavor Profile

A dark, smooth, full-bodied brew with malty, caramel undertones. Pairs well with milk and sugar.

Organic

Grown at a certified organic tea garden in Assam.

Suggested Use

Brew one teaspoon of leaf in eight ounces of filtered water at 200ºF for four minutes.

Other Ingredients

Organic black tea leaves.
