Autumn Cake
Ingredients:
Products to use for the syrup:
3 4 cup TheLifeCo Organic Coconut Milk
1 cup steamed pumpkin puree
1 tablespoon cinnamon powder
1 teaspoon each of allspice, ginger, and cloves
1 teaspoon pure vanilla powder
1 packet TheLifeCo Organic Psyllium (4 g)
Cake For the dough
1 cup coarsely crushed walnuts
5 tablespoons TheLifeCo Organic Coconut Sugar
5 tablespoons TheLifeCo Almond Flour
5 tablespoons gluten-free oat flour
1 tablespoon TheLifeCo Chia Seeds
1 packet baking powder 1 teaspoon baking soda
120g vegan dark chocolate, broken into pieces
Preparation:
Puree the steamed pumpkin using a blender and cook all the ingredients for the syrup, except the psyllium, in a saucepan.
Before removing from the heat, add the psyllium and cook over low heat, stirring constantly, until it reaches a jelly-like consistency. Let it cool.
Then, combine the ingredients for the dough in a deep bowl, mix with a spoon, and finally add the syrup mixture and mix with a mixer.
Divide the cake batter among the muffin tins and, if desired, garnish with crushed walnuts. Bake in a preheated oven at 180 C (350 F) with a fan setting for 35-40 minutes.
GLUTEN-FREE VEGAN BREAD WITH TURMERIC
Ingredients:
1 cup TheLifeCo Organic Almond Flour 1.5 cups gluten-free flour of your choice
1 teaspoon TheLifeCo Organic Psyllium Powder 1 cup drinking water
1 teaspoon TheLifeCo Himalayan Salt
2 tablespoons olive oil
1 tablespoon turmeric powder
1 teaspoon baking powder
For the topping:
Whisk the psyllium and water until it reaches a jelly-like consistency.
Mix the dry ingredients together and combine with the jelly-like mixture.
Shape into small circles and arrange on a baking sheet. Sprinkle with sesame, rosemary, and poppy seeds.
Bake in a preheated oven at 175 degrees Celsius for 20-25 minutes.
