Technical Information: Active bentonite is a special product used in the clarification of beverages and the removal of positively charged albuminous substances from fruit juice and vinegar. The active ingredient of the product is the montmorrilonite mineral, which has a unique crystal structure and a high degree of swelling. Montmorrilonite is a laminar aluminum silicate containing crystal water and variable amounts of positive charge. Due to this specific structure, it has a high negative charge and is extremely strong at adsorbing positively charged substances such as protein. Bentonite's silicate lamination exhibits varying swelling properties depending on the surrounding medium (water, fruit juice). Because this mineral also possesses a small amount of positive charge carriers, it can also adsorb tannins and other negatively charged colloidal substances. Specific Advantages of Using Active Bentonite: It is specially formulated for albumin adsorption in beverages. Due to its sodium content, it has a very high degree of protein adsorption. Despite its significant swelling properties, it forms a low-volume sediment. In addition to the adsorption of proteins, tannins and heavy metals are also removed. Application: To ensure optimal stabilization without excessive bentonite use, we recommend performing preliminary tests for each clarification process. Approximate usage quantities for different applications are: If preliminary tests are not performed, the values given below can be used as a reference. However, in this case, stability control must be performed on the entire final product. Product Dosage (Active Bentonite) Fruit juices with low protein content 300-1,000 g ton Fruit juices with moderate protein content 800-1,800 g ton Fruit juices with high protein content 1,500-2,500 g ton Fruit juices with excessive protein content 3,500 g ton Over-oxidized fruit juices 200-1,500 g ton Sediment recovery 1,000-3,500 g ton In fruit juices 300-3,000 g ton In aroma development 50-150 g ton In vinegar clarification 500-1,200 g ton Clarification Process: Active bentonite can be easily swelled or added directly to the beverage. However, expanding the beverage before adding it to the drink provides more effective results. The bentonite to be used for expansion is mixed vigorously in 10-15 times the liquid, preferably using a mixer. The mixing process is completed when a homogeneous suspension is achieved. If the expansion process is carried out over time and with occasional stirring, even more positive results are achieved. For economic reasons, we recommend using water instead of beverage for expansion. This is because the liquid used for expansion cannot be recovered later. A positive result from bentonite clarification depends on thorough mixing and ensuring good contact between the bentonite and the beverage. The beverage to be clarified should be stirred thoroughly before adding the bentonite. Then, the freshly prepared bentonite suspension is slowly added. Mixing should then be continued for 15 to 30 minutes. For better results, it should be stirred again after a few hours. Clarification after clarification: Active bentonite takes effect quickly and effectively. Therefore, separation can be performed shortly after clarification. However, the most economical clarification method is to wait for the bentonite to settle and then filter out the naturally clarified portion. This minimizes the resulting sediment volume, which can be processed using rotary vacuum filters or frame (plate) sediment filters. Since Active Bentonite does not contain substances that cause environmental pollution, it can be easily disposed of with other wastes.
