Pectin is a polysaccharide that can be defined as a long chain composed of pectic acid and pectinic acid molecules.It is known by the code E440. It is used as a stabilizer and thickener in food production.Pectin consists of three main parts:Homogalacturonan consists of repeating monosaccharide subunits, including D-galacturonic acid.Rhamnogalacturonan I consists of alternating L-rhamnose and D-galacturonic acid subunits containing a(15)Larabinan and ß(14)D-galactan side bonds.Rhamnogalacturonan II is a complex, highly branched polysaccharide.Pectin preparations in which more than 50 of the carboxyl groups are in the methyl ester form are called high-methoxylation pectin. Preparations in which less than 50 of the carboxyl groups are in the methyl ester form are considered low-methoxylation pectin.Pectin is a natural substance found in almost all fruits, especially apples, quinces, and oranges.The type found in apple peels acts as a magnet for heavy metal ions, such as lead and arsenic, in the blood, helping to flush them out of the circulatory system. It is less abundant in soft fruits like cherries and strawberries. In fruit, it helps hold cells together. When fungal enzymes (pectinases) break down pectin, the fruit becomes soft and mushy. It is commercially extracted from apple pulp and orange peel.Pectin has the ability to form a gel when combined with sugar. For this reason, pectin, in combination with sugar, is used as a bulking agent in the food industry.A well-known use of pectin is in jam making. Many fruits contain pectin, but not enough pectin to form a gel in jam therefore, pectin is added to improve the quality of the jam.Pectin is added to a special sugar (gelling sugar) used specifically in jam making. When the pectin and sugar are heated, a network forms.
