Propionate is a short-chain fatty acid produced under normal physiological conditions. It is used in many metabolic processes in the body.

The calcium salt of propionic acid is a natural acid found in small amounts in many foods.

It is sometimes produced in high concentrations by bacteria in fermented foods. (For example, in Swiss cheese varieties)

It is also produced in large quantities by bacteria in the large intestine.

Propionic acid and propionates are primarily used as preservatives against fungi. Calcium propionate, listed as E 282 in the food additives list, has been found to have no negative effect on yeast activity and is the most effective preservative in preventing the growth of Bacillus Mesentericus, the cause of rope disease in brown bread.

Propiyonat normal fizyolojik sartlarda da üretilen kisa zincirli bir yag asitidir. Vücutta bir çok metabolik islemde kullanilir.

Propiyonik asitin kalsiyum tuzu, birçok gidanin içerisinde küçük miktarlarda bulunan dogal bir asittir.

Bazen bakteriler tarafindan fermente gidalarin içerisinde yüksek konsantrasyonlarda üretilir. (Örnegin Isviçre peynir çesitlerinde)

Kalin bagirsaktaki bakteriler tarafindan büyük miktarlarda da üretilir.

Propiyonik asit ve propiyonatlar baslica mantarlara karsi koruyucu olarak kullanilirlar. Gida katki maddeleri listesinde E 282 kodu ile yer almakta olan kalsiyum propiyonatkullaniminin, maya aktivitesi üzerine olumsuz etki yapmadigi, esmer ekmekte rope hastaliginin nedeni olanBacillus Mesentericus'in gelisiminin önlenmesinde en fazla etkiye sahip olan koruyucu oldugu belirlenmistir.
