If use is planned in countries other than Turkey, the legal regulations of the relevant country should be taken into account.

Potassium Bitartrate is also known as cream of tartar or cream of tartar.
It has the chemical formula KC4H5O6.
This important substance, which provides the function of baking powder, one of the most important ingredients in pastry making, is the organic precipitate in salt form of tartaric acid, found only in grapes.
Potassium bitartrate occurs as white crystals or crystalline powders, is odorless, and has an acidic taste.
It is harmless.
Tartaric Acid
Potassium bitartrate is the salt of tartaric acid. Tartaric acid is the primary acid in grapes, accounting for 80 of the total acidity of these fruits. Additionally, tartaric acid constitutes 1.6–2.8 of the total acid in berries.
Tartaric acid, chemically known as dihydrocysteine butanedioic acid, is a biotechnological substance found widely in plants and of increasing industrial importance.
Tartaric acid has four stereoisomers. These are d(dextro)tartaric acid, found in grapes and other fruits l(levo)tartaric acid, obtained from the racemic mixture and dl tartaric acid and meso tartaric acid, both artificially obtained racemic mixtures.
Tartaric acid was first identified by C.W. Scheele in 1769.
Potassium bitartrate uses:
Potassium bitartrate, when used in molasses production, allows the crystallized substances in these products to precipitate more quickly during cooling and shortens the cooling time. (This process, which normally takes 12 weeks, is reduced to 24 hours.)
It is used in sugary products. Sugary products are generally produced by cooking sugar and glucose at high temperatures, adding citric acid, tartaric acid, or potassium bitartrate to the dough, then adding additives appropriate to the type of final product, and then shaping it accordingly.
It prevents sugar crystallization.
Potassium sodium tartrate, obtained from potassium bitartrate, is used in the cheese industry and in the production of mirrors and laxatives.
It is used in the electrolytic tinning of iron and steel, and in the plating of gold and silver.
In publications on dye chemistry, the function of cream of tartar is stated as facilitating the bond between the mordant and the wool fibers, making the dye easier to detect, and imparting bright colors to the wool. It is used with sap, and sometimes tin helps increase the effect of chemicals on the fiber. If a mordant is required for a dye bath, cream of tartar alone is satisfactory due to its properties.

Tartarik Asit
Potasyum bitartarat, tartarik asidin tuzudur. Tartarik asit, üzümlerin temel asiti olup, bu meyvelerin toplam asitliginin -80'ini olusturur. Ayrica üzümsü meyvelerde toplam asidin 1,6–2,8'ini tartarik asit olusturmaktadir.
Tartarik asit ya da kimyasal olarak bilinen ismiyle dihidrosibütandioik asit bitkilerde yaygin olarak bulunan ve endüstriyel önemi gittikçe artan bir biyoteknolojik maddedir.
Tartarik asidin dört steroizomeri vardir. Bunlar üzümde ve baska meyvelerde bulunan d (deksro) tartarik asit, rasemik karisimdan elde edilen l (levo) tartarik asit ve yapay olarak elde edilen rasemik karisim dl tartarik asit ile mezo tartarik asittir.
Tartarik asit ilk olarak 1769'da C.W.Scheele tarafindan belirlenmistir.
Potasyum bitartarat kullanim alanlari:
Potasyum bitartarat pekmez üretiminde kullanilirken, bu ürünlerin içerisinde bulunan kristalize maddelerin sogutma esnasinda daha hizli çökelmesini saglar ve sogutma süresini kisaltir. (Normalde 1 2 hafta süren bu süreyi, 24 saate düsürür.)
Sekerli mamullerde kullanilir. Sekerli mamuller genel olarak, yüksek isida pisirilen seker ile glikoza sitrik asit, tartarik asit ya da potasyum bitartarat eklenmesi ile olusan hamura, nihai mamulün türüne uygun katki maddelerinin ilavesinden sonra, uygun sekillendirme isleminin gerçeklestirilmesiyle elde edilir.
Sekerin kristallesmesini önler.
Potasyum bitartarattan elde edilen potasyum sodyum tartarat peynir sanayisinde, ayna ve müshil yapiminda kullanilir.
Demir ve çeligin elektroliz yolu ile kalaylanmasinda, altin ve gümüs kaplanmasinda kullanilmaktadir.
Boya kimyasi üzerine hazirlanmis yayinlarda, krem tartarin görevi, mordanla yün lifleri arasinda bagin kurulmasini kolaylastirarak, boyarmaddenin daha kolay saptanmasini saglamak ve yüne parlak renkler kazandirmasi olarak belirtilmektedir. Sap ile kullanilir ve bazen kalay da lif üzerindeki kimyasallarin etkisini artirmaya yardim eder. Eger bir boya banyosu için mordan gerekiyorsa krem tartar tasidigi özellikler nedeni ile tek basina tatmin edici olmaktadir.
