In accordance with the Turkish Food Codex Food Additives Regulation, it should be used in accordance with the vertical communiqués regarding the finished product produced or planned to be produced, taking into account the foods to which it can be added, the conditions of use, maximum quantities, and restrictions.
If use is planned in countries other than Turkey, the legal regulations of the relevant country should be taken into consideration.
Product performance may vary depending on production conditions, the structure and performance of machinery and equipment, seasonal variables, and other raw materials.
Before determining the optimal usage amount, trials should be conducted with minimum quantities, taking into consideration the restrictions specified in the Turkish Food Codex Food Additives Regulation.

Technical Information:
Carrageenan is a polysaccharide obtained from seaweed.
It takes its name from the Irish village of Carragheen, due to the abundance of this seaweed along its coast. Today, it is produced in Canada, the Philippines, Chile, the USA, Indonesia, France, and Portugal.
The gelatinous liquid obtained from this seaweed has been used in foods for centuries.
Carrageenans are highly flexible molecules that can form helical structures.
Thanks to these properties, they can form different gels at room temperature. Therefore, they are used as stabilizers in the food industry and other sectors.
One of the most important advantages of carrageenans is their thixotropic nature. (They thin under surface pressure, but return to their original viscosity when this pressure is removed.) Thanks to this property, they are easily pumped and harden again immediately.
There are three types of commercial carrageenan:
Tito Fully Refined Carrageenan is a kappa type carrageenan.
Kappa Carrageenan: Forms hard, solid gels. Produced from Kappaphycus cottonii.
Iota Carrageenan: Forms soft gels. Produced from Eucheuma spinosum.
Lambda Carrageenan: When combined with proteins instead of water, it forms gels. It is used to thicken dairy products. Produced from Gigartina.
All of these types of carrageenan are soluble in hot water, but only Lambda Carrageenan is soluble in cold water.
Carrageenan is accepted as a food additive by the EU and is identified with the codes E407 and E407a.
Application Areas of Carrageenan in the Food Industry:
It is used to increase viscosity in desserts, sauces, frozen products, and beverages.
Dairy Products: Dairy products are the most widely used form of carrageenan worldwide. Carrageenan interacts with milk proteins and increases consistency.
In chocolate milk, it prevents cocoa particles from settling. It is used to increase viscosity in products such as cream cheese, whipped cream, custard, puddings, yogurt, milk shakes, and ayran.
Puddings: It is used as a gelling agent in milk puddings and also promotes coagulation. It can be used with other gums, starches, and phosphate salts. It is used at concentrations between 0.1 and 0.2 .
Processed Meat Products: Used as a fat substitute, it increases the water retention capacity and volume of the finished product. It makes processed meat products like salami softer and easier to slice.
Jams and marmalades: Used at a rate of 1 .
Freezing: Increases the viscosity of the unfrozen portion, keeps crystal size limited, prevents crystallization, and ensures color retention. Used at a rate of 0.1 to 0.3 .
Jellies: Used to create transparent and flexible water-based jellies. It can be preferred instead of gelatin. It can be used in a mixture with carob gum.
Application Areas of Carrageenan in the Cosmetics Industry:
Toothpaste: It binds and stabilizes the ingredients of toothpaste.
It is used as a thickener in shampoos and cosmetic creams.
Application Areas of Carrageenan in the Pharmaceutical Industry:
Carrageenan is used as a filler in pills and tablets.

Shoe polishes: Used to increase viscosity.
Fire extinguishers: Used as a thickener to make foam more tacky.
Biotechnology: Used to immobilize enzymes.

Karagenan, deniz yosunlarindan elde edilen bir polisakkarittir.
Ismini, Irlanda'nin bir köyü olan Carragheen'in sahilleri boyunca bu deniz yosunlarinin yogunlukta olmasindan dolayi, bu köyden almistir. Günümüzde, Kanada, Filipinler, Sili, ABD, Endonezya, Fransa ve Portekiz'de üretilmektedir.
Bu yosundan elde edilen jelatinimsi sivi, yüzyillardir gidalarda kullanilmaktadir.
Karagenanlar, yüksek esneklige sahip, sarmal yapilar olusturabilen moleküllerdir.
Bu özellikleri sayesinde, oda sicakliginda farkli jeller olusturabilirler. Bu nedenle gida sektöründe ve diger sektörlerde stabilizatör olarak kullanilirlar.
Karagenanlarin en önemli avantajlarin biri, tiksotropik olmalaridir. (Yüzey basinci ile incelir, ancak bu basinç kalktiginda ise eski viskozitelerine geri ulasirlar.) Bu özellikleri sayesinde kolay pompalanirlar ve hemen ardindan tekrar sertlesirler.
Üç tip ticari karagenan vardir:
Tito Tam Rafine Karagenan, kappa tip karagenandir.
Kappa Karagenan: Sert ve kati jeller olusturur. Kappaphycus cottonii'den üretilmistir.
Iota Karagenan: Yumusak jeller olusturur. Eucheuma spinosum'dan üretilmistir.
Lambda Karagenan: Su yerine proteinlerle birlestiginde, jeller olusturur. Süt ürünlerini kalinlastirmak amaciyla kullanilir. Gigartina'dan üretilmistir.
Tüm bu karagenan tipleri sicak suda çözünür, ama sadece Lambda karagenan soguk suda çözünebilmektedir.
Karagenan AB tarafindan gida katki maddesi olarak kabul edilmis ve E407 ile E407a kodlari ile tanimlanmistir.
Karagenan'in Gida Sektöründeki Uygulama Alanlari:
Tatlilar, soslar, dondurulmus ürünler, içecekler Viskoziteyi arttirmak amaciyla kullanilir.
Süt Ürünleri: Dünyada karagenanin en çok kullanildigi alan süt ürünleridir. Karagenan, süt proteinleri ile etkilesime girer ve kivami arttirir.
Çikolatali sütte, kakao parçaciklarinin çökmesini engeller. Krem peyniri, krem santi, krema, pudingler, yogurt, milk shake ve ayran gibi ürünlerde viskoziteyi arttirmak için kullanilir.
Pudingler: Sütlü pudinglerde jellestirici ajan olarak kullanilir ve pihtilasmayi da öner. Diger gamlar, nisastalar ve fosfat tuzlari ile kullanilabilir. 0.1 0.2 arasinda kullanilir.
Islenmis Et Ürünleri: Yag yerine ikame edici olarak kullanilirak, bitmis ürünün su tutma kapasitesi ve hacmi arttirilir. Salam benzeri islenmis et ürünlerinin yumusak olmasini ve daha iyi dilimlenmesini saglar.
Reçeller ve marmelatlar: 1 oraninda kullanilir.
Dondurma: Donmamis bölümün viskozitesini arttirir, kristal boyutunu sinirli tutar, kristalizasyonu önler ve rengin kaliciligini saglar. 0.1 ile 0.3 arasinda kullanilir.
Jöleler: Seffaf ve esnek yapida su bazli jöleler olusturmak için kullanilir. Jelatin yerine tercih edilebilir. Keçiboynuzu gami ile karisim yapilarak, kullanilabilir.
