Guar gum is a thickener obtained from the endosperm of the guar bean (Cyamopsis tetragonolobus,Cyamopsis psoralaides).
It is referred to by the code E412. It is also used as a food source for humans and animals.
It consists of high molecular weight (50,0008,000,000) polysaccharides composed of galactomannans the mannose:galactose ratio is approximately 2.1. In powder form, it is very well hydrated in water, yielding colloidal solutions that find many applications in the food industry.
When dispersed in water, hydrated guar gum rapidly increases the viscosity of the product to which it is added, reaching approximately half of its final viscosity within 10-15 minutes without heating.
Guar gum, which has a neutral structure, is compatible with other food ingredients and interacts with starch, cellulose, agar, carrageenan, and xanthan gum.
This interaction occurs by binding with cellulose, while with water-soluble proteins it manifests itself as an increase in viscosity. For example, the viscosity observed in a mixture of guar gum and xanthan gum is quite high compared to the values obtained when each gum is used separately. The intermolecular interaction between guar gum and cellulose is particularly used in the production of fat substitutes.
Guar gum maintains its stability for up to 5 minutes at 80 C (176 F).

E412 koduyla anilir. Insan ve hayvanlar için bir besin kaynagi olarak kullanimi da bulunmaktadir.
Galaktomannanlardan olusturdugu yüksek moleküler agirlikli (50,000 8.000.000) polisakkaritlerden olusur mannoz:galaktoz orani yaklasik 2,1'dir. Toz formunda suda çok iyi hidratlanabilmekte ve gida sanayisinde birçok uygulama alani bulan kolloidal çözeltiler vermektedir.
Suda dagitildiginda hidratlasan guar gam, katildigi ürünün viskozitesini hizla artirmakta, isitmadan 10- 15 dakika içinde son viskozite degerinin yaklasik yarisina ulasmaktadir.
Nötral yapida olan guar gam diger gida bilesenleriyle uyumlu olup, nisasta, selüloz, agar, karagenan ve ksantan gamla etkilesime girmektedir.
Bu etkilesim, selülozla baglanma seklinde gerçeklesirken, suda çözünen proteinlerle ise viskozitede artis olarak kendini göstermektedir. Örnegin guar gam ve ksantan gamkarisiminda görülen viskozite her bir gam ayri ayri kullanildiginda elde edilen degerlerle karsilastirildiginda oldukça yüksek kalmaktadir. Guar gamla ile selüloz arasindaki moleküller arasi etkilesim, özellikle yaglarin yerine kullanilabilen maddelerin üretiminde kullanilmaktadir.
Guar gam 80 C'de (176 F) 5 dakika kadar dayanikliligini korumaktadir.
