Invertase enzyme is a food additive identified with the code E1103 and converts crystalline sugar (sucrose) into the liquid sugars fructose and glucose.
During this reaction, 1 mole of water is used to obtain 1 mole each of fructose and glucose.
Fructose and glucose, distributed equally in the P-P ratio, are also called invert sugar. Invert sugar has many applications in the food, beverage, and pharmaceutical industries.
Invertase enzyme is used to invert crystalline sugar, particularly in the confectionery and dessert industries, to obtain invert sugar to extend the shelf life of finished products.
Invert sugar is used to produce candies and chocolates with liquid contents. Sugar crystallization problems in marzipan and other sugary products are easily prevented. By reducing the water activity in the products, microorganisms are less susceptible to survival, thus extending their shelf life.
Invertase is also used in some fruit juice products to reduce the sucrose content.
