Propionate is a short-chain fatty acid produced under normal physiological conditions. It is used in many metabolic processes in the body.
The calcium salt of propionic acid is a natural acid found in small amounts in many foods.
It is sometimes produced in high concentrations by bacteria in fermented foods. (For example, in Swiss cheese varieties)
It is also produced in large quantities by bacteria in the large intestine.
Propionic acid and propionates are primarily used as preservatives against fungi. Calcium propionate, listed as E 282 in the food additives list, has been found to have no negative effect on yeast activity and is the most effective preservative in preventing the growth of Bacillus Mesentericus, the cause of rope disease in brown bread.
