Citric acid is a colorless, crystalline, weak organic acid, one of the carboxylic acids.
Citric acid is found in many plants and fruits, especially citrus fruits.
Lemons contain a large amount of this acid (up to 8 of their dry weight).
The chemical structure of citric acid is shown below. Its molecular formula is c6h8o7 and its molecular weight is 192.123 g mol.
Citric acid exists in crystalline form at room temperature, has a density of 1.665 g cm³, a melting point of 153 C, and decomposes when heated above 175 C, losing carbon dioxide and water molecules. Its solubility in water is high:
133 g 100 ml (20 C).
Citric acid and its salts are non-toxic, easy to use, and easily decomposable, making them widely used.
Citric acid was obtained in 1784 by the Swedish chemist Carl Wilhelm Scheele through the crystallization of lemon juice. Industrial production of citric acid began in 1860 by the Italian citrus industry and has been used as a food additive for over 100 years.
Although citric acid is found in large quantities in fruits and citrus fruits, its isolation from these plants is expensive. Therefore, it is commercially produced from sugar with the help of bacteria and yeast.
Citric acid monohydrate contains one molecule of water, while citric acid anhydrate contains no water molecule, i.e., no moisture.
Therefore, citric acid monohydrate is approximately 7 moisture, making it cheaper than anhydrous, but also less effective.
E330 is the food additive code for citric acid. Citric acid is the most common pH control agent in the food industry.
It strengthens the function of antioxidants such as ascorbic acid (vitamin C, E300) and prevents fruits from turning brown it is also used as a pH reducer in beer and jam production.
Citric acid stabilizes sugars and candies to prevent sugar crystallization.
Citric acid easily bonds with metals and minerals, and thanks to this property, it facilitates the absorption of some citric acid-containing minerals into the body because these substances are easier to digest.
According to the World Intellectual Property Organization (WIPO), the amount of citric acid in a product must be between 0.005 and 0.01 of the product by mass, and the particle size must be 6 µm.
Citric acid is used as an additive in bathroom and kitchen cleaners. A citric acid solution prepared at a concentration of 6 removes limescale from glass. It is also used in industry to remove rust from steel.
Annual citric acid production in 2007 was around 1,700,000 tons, more than 50 of which was produced in China. More than 50 of this amount is used in beverages for acidification, 10 in the food industry, 10 in detergents, and the remainder in the cosmetics and chemical industries.
