Synthetic lactic acid is used as a flavoring agent and preservative in food processing and carbonated beverages.
Used in conjunction with acetic acid in pickles and other applications, lactic acid provides a mild aroma while increasing microbial stability.
Lactic acid is used in the dairy industry to regulate acidity. It is the most preferred acidity regulator in the dairy industry, particularly because it is a natural acid derived from milk, and is used to increase the acidity of low-acid milk.
Combinations of lactic acid and acetic acid have also been found to be effective preservatives for salads and sauces.
The powdered form of lactic acid is widely used in confectionery. In confectionery, it enhances the perceived fruit flavor and leaves a fresher taste, depending on the type of flavoring used.
