Potassium sorbate, listed in the food additives list with code E 202, is a preservative.
In the late 1930s, it was discovered that sorbic acid and its salts inhibited the growth of microorganisms.
After this, the use of potassium sorbate in the food industry increased rapidly.
It is found in nature in the fruit of the rowan tree (Sorbus aucuparia).
Potassium sorbate is the salt of sorbic acid obtained from the reaction of sorbic acid with potassium hydroxide. It is a polymeric, white, and crystalline substance and is available in powder or granular form.
It has no distinct taste or odor at normal use concentrations.
It is highly soluble in water and slightly soluble in alcohol.
The most suitable pH is below 6.0. It is effective up to pH 6.5, but the effectiveness of potassium sorbate increases as the pH value decreases.
Application Areas:
Potassium sorbate, used in many food products and beverages, is effective against molds, yeasts, and many aerobic bacteria. While extending the life of food products, it does not limit the growth of beneficial bacteria and is also effective in preserving the food's unique aroma.
It is used in many foods such as bread, margarine, tomato paste, mayonnaise, jam, fish, candy, cheese, yogurt, fruit products, and bakery products. Because it has a neutral flavor, it is widely used in fruit juices. Because it is resistant to high temperatures, it can be easily used in heat-treated foods.
It is applied to food products by sprinkling, adding directly, dipping, spraying, or placing in packaging as a powder.
It is used in the food and beverage industries, as well as in personal care products and pharmaceuticals. Its use in personal care products extends the shelf life of products by inhibiting microbial growth.
Because potassium sorbate has less antimicrobial activity than sorbic acid, it must be used in larger amounts.It is more effective than sodium benzoate. Because it does not affect the taste or odor of foods, it is a more suitable preservative than sodium benzoate in some applications.
