Although the average granule size is 30 microns, granule diameters vary between 5 and 100 microns.
The amylose to amylose ratio in potato starch varies between 21 and 80. (Average 1:4)
When comparing the degree of gelatinization with other natural starches, it is observed that natural potato starch begins to gel at much lower degrees. (5968 C)
Potato starch is used as a thickener, adhesive, texture regulator, and binder in various sectors, especially the food industry.
Using a mixture of cornstarch and potato starch instead of corn starch alone in Turkish delight production increases the brightness, transparency, and appearance of the products.
