Glucono Delta Lactone (GDL) is a raw material found naturally in products such as honey, fruit juice, and processed vegetables. It is obtained from a plant-derived carbohydrate through microbial fermentation.
Glucono Delta Lactone, identified by the code E575, has a sourness one-third that of citric acid and a sharp taste.
GDL is converted to gluconic acid with the addition of water. When this conversion process is quite slow, GDL acts as a slow acidity regulator and gradually lowers pH. Therefore, it is used as an acidity regulator and pH adjuster in cheese products such as white cheese and mozzarella, in tofu production, in meat products such as sausages, soudjouk, and canned meat, in the production of ketchup, salad dressing, chip sauces, and prepared salads (potato salad, chicken salad, tuna salad, shrimp salad, etc.). It is used as a preservative to extend the shelf life of seafood such as shrimp and mussels. It is used as a leavening agent in baked goods, along with sodium bicarbonate. It is used as an ingredient in lubricants.
Gluconolactone is not only a food ingredient but also used in personal care products such as moisturizers, facial cleansers, sunscreen, and hair conditioners.
