Nisin is a natural preservative effective against Gram-positive bacteria and their spores. It is a bacteriocin obtained by fermenting the bacteria Lactococcus lactis
It is obtained naturally, not chemically synthesized. It is a natural preservative found in very low amounts in milk and cheese.
Its molecular formula is C143H228N42O37S7, its molecular weight is 3353 daltons, and its color is white.
Nisin was discovered by Rogers in 1928, first isolated in 1947, first used in food in 1951, and included among the food preservatives by the FAO and WHO in 1969.
Dry nisin can be stored for long periods at 415 C without losing its properties, as long as it is not exposed to direct sunlight or exposed to moisture. It dissolves easily in low-pH solutions and degrades in solutions above pH 4. Nisin is not resistant to heat.
Nisin in solution or dry powder can be used by mixing it directly into food. Nisin can also be sprayed onto the surface of food, dipped in the solution, or used as a coating agent during food packaging. Nisin has no effect on food taste.
Nisin was first used to extend the shelf life of cheese because it inhibits the growth and effects of gram-positive and pathogenic bacteria.
Nisin is also used as a preservative additive in many sectors because it inhibits the activities of pathogens such asClostridium botulinum, Staphylococcus aureus, Streptococcus hemolyticus, Listeria monocytogenes, Bacillus cereus, Bacillus sporothermodurans, Brochothrix thermosphacta, Bacillus stearothermophilusandBacillus subtilis
Using nisin saves energy in heat-treated foods. When the temperature is kept constant, it has been observed that heat-treatment times for foods containing nisin are shorter than those without. Therefore, adding nisin to heat-treated foods both increases food safety and saves energy.

Dogal olarak elde edilir, kimyasal olarak sentezlenmez. Sütte ve peynirde çok düsük oranlarda bulunan, dogal bir koruyucu maddedir.
