It is a polymeric, white, and crystalline substance, available in powder or granular form. It has no distinct taste or odor at normal concentrations. It is highly soluble in water and slightly soluble in alcohol. The optimum pH is below 6.0, effective up to 6.5, but the effectiveness of potassium sorbate increases as the pH decreases. Applications: Used in many food products and beverages, potassium sorbate is effective against mold, yeast, and many aerobic bacteria. While it extends the shelf life of food, it does not inhibit the growth of beneficial bacteria, and it is also effective in preserving the food's unique flavor.
