Sodium benzoate is a chemical salt. It is obtained by neutralizing benzoic acid with sodium bicarbonate, sodium carbonate, or sodium hydroxide.Sodium benzoate does not occur in pure form in nature, but benzoic acid, from which it is derived, is naturally found in many animals and plants and is produced from them. It is found as a white, solid.Foods such as apples, cinnamon, prunes, garlic, and raw cloves are examples of foods containing benzoic acid.Its chemical formula is C6H5CO2Na (C7H5NaO2), its molecular weight is 144.11 g mol, and its decomposition temperature is 300 C. It is easily soluble in water.Benzoic acid, the source of sodium benzoate, is commercially produced by the reaction of oxygen and toluene in the liquid phase at around 200 C. Cobalt and manganese salts are used as catalysts. Alternatively, this production method involves the oxidation of benzene with concentrated sulfuric acid or CO2 in the presence of catalysts. Of the benzoic acid produced, 50 is used in industry, and 50 is used in the production of sodium benzoate, which is used in the pharmaceutical, food, and cosmetics sectors.The melting point of sodium benzoate is around 300 C. Sodium benzoate's solubility in water is 200 times greater than that of benzoic acid.Potassium benzoate, another salt derived from benzoic acid, is also a preservative additive, like sodium benzoate.
