In accordance with the Turkish Food Codex Food Additives Regulation, the product should be used in accordance with the vertical communiqués regarding the finished product being produced or planned to be produced, taking into account the foods to which it can be added, the conditions of use, maximum quantities, and restrictions.
If use is planned in countries other than Turkey, the legal regulations of the relevant country should be taken into account.
Product performance may vary depending on production conditions, the structure and performance of machinery and equipment, seasonal variables, and other raw materials.
Before determining the optimal amount, trials should be conducted with minimum quantities, taking into account the restrictions specified in the Turkish Food Codex Food Additives Regulation.

Tara gum is used as a thickening agent in foods and is designated E 417.
Tara gum is obtained from the tara plant (Caesalpinia spinosa) that grows in South America (especially Peru and Bolivia).
Tara gum is extracted by grinding the seed endosperm of this legume plant.
It contains high molecular weight polysaccharides composed of galactomannans. The main component consists of a linear chain of (14)beta Dmannopyranose units along with alpha Dgalactopyranose units connected by (16) linkages. In tara gum, the ratio of mannose to galactose is 3:1.
Tara gum is odorless and white to yellowish-white in color. It is well soluble in cold and hot water, but insoluble in ethanol. Its highest viscosity is observed when dissolved in hot water at 40 C. It is also well soluble in milk-based solutions (37 g L). Tara gum has a higher viscosity than locust bean gum and lower than guar gum. Tara gum is used in various food applications, either chemically modified or blended with other gums.
Tara gum (TG) is also known as Peruvian LBG because its molecular structure and botanical position are similar to locust bean gum (LBG).
It is a natural thickener and imparts very little flavor. Tara gum imparts a buttery, creamy taste. It affects the gelation rate and degree of gelation in foods. When combined with other thickeners (such as agar and carrageenan), it creates a more elastic gel. The gel formed at low pH (pH 4.6) is harder than the gel formed at natural pH (pH 7.0). The presence of tara gum in foods reduces or eliminates curd formation.
Its application in foods is between 0.05 and 1 .
It is used as an alternative to tara gum in textile printing technology because it increases the consistency of the dye.
It is used in the cosmetics and pharmaceutical industries to thicken creams and lotions.
It is used in all recipes requiring elastic or weak gel formation, such as fruit jellies and jams.
It is used in small amounts in sauces, soups, and fruit-containing products to provide low-calorie consistency and flavor.
It is used to increase the gelling activity of agar agar and carrageenan.
In bread and bakery products, tara gum prevents the product from becoming bone dry, improves softness, and provides a spongy texture to the bread crumb. Thus, it extends the shelf life of the products.
It is used instead of carob gum. In some product groups, using tara gum is more economical, as a 25 reduction in the amount is sufficient to give the products consistency.
It is an alternative to sodium alginate (E401).
Tara gum is used as a thickener in ice cream, along with other types of thickeners, to give the ice cream a soft consistency.
Tara gum provides texture to frozen desserts by providing a buttery texture (giving a buttery taste). It also provides resistance to temperature changes. It also prevents the formation of sugar and ice crystals and the loss of flavor.
When used with xanthan gum, it creates long-lasting suspensions. This mixture increases the stability and consistency of products when used in salad dressings, mustard, ketchup, and mayonnaise.
It prevents crystallization and shrinkage-related water loss in meat products. It acts as a water-retaining, heat-resistant, and freezing- and thawing-resistant agent in products, preserving their flavor without altering them.
Tara gum is also used in various dairy products and beverages.

Tara gam, gidalarda kivam arttirici katki maddesi olarak kullanilir ve E 417 olarak numaralandirilmistir.
Tara gam, Güney Amerika'da (özellikle Peru ve Bolivya) yetisen tara bitkisinden (Caesalpinia spinosa) elde edilir.
Baklagiller ailesinden olan bu bitkinin tohum endospermleri ögütülerek tara gam çikarimi yapilir.
Galaktomannanlardan olusan, yüksek molekül agirlikli polisakaritleri içerir. Ana bilesen, (1 6) baglari ile bagli, alfa D galaktopiranoz birimleri ile birlikte (1 4) beta D mannopiranoz birimlerinin lineer zincirinden olusur. Tara gamda, mannozun galaktoza orani 3:1'dir.
Tara gam kokusuzdur ve beyaz ile sarimsi beyaz arasi bir renktedir. Soguk ve sicak suda iyi çözünür, ama etanolde çözünmez. En yüksek viskozite degeri 40 C'deki sicak suda çözündügünde görülür. Süt kaynakli solüsyonlarda da iyi (3 7 g L) çözünür. Tara gamin viskozitesi keçiboynuzu gamina kiyasla yüksek, guar gama kiyasla düsüktür. Tara gam, kimyasal olarak degistirilerek veya diger gamlarla karistirilarak, degisik gida uygulamalarinda kullanilir.
Tara gam (TG), moleküler yapisi ve botanik pozisyon özellikleri açisindan, keçiboynuzu gamina (LBG) benzedigi için Peru LBG olarak da bilinir.
Dogal bir koyulastiricidir, çok az aroma verir. Tara gam, yagli ve kremamsi bir agiz tadi verir. Gidalarda jellesme hizina ve jel derecesine etki eder. Diger kivamlastiricilarla birlestiginde (agar ve karagenan gibi) daha elastik yapida bir jel olusumunu saglar. Düsük pH'ta (pH 4.6) olusan jel, dogal pH'ta (pH 7.0) olusan jelden daha serttir. Gidalarda tara gam bulunmasi pihti olusumunu indirger veya yok eder.
Gidalarda uygulanmasi 0,05 – 1 arasindadir.
Tekstilde baski teknolojisinde boyanin kivamini arttirdigi için, tara gam alternatif madde olarak kullanilir.
Kozmetikte ve ilaç endüstrisinde kremlerin ve losyonlarin koyu kivamini saglamak için kullanilir.
Meyve jöleleri ve reçeller gibi tüm elastik ve ya zayif yapida jel olusumu istenen tariflerde kullanilir.
Az ölçüde soslarda, çorbalarda ve meyve içerikli ürünlerde düsük kalorili kivamliligi ve agiz tadini saglamak amaciyla kullanilir.
Agar agar ve karagenanin jellesme aktivitelerini arttirmak amaciyla kullanilirlar.
Ekmekte ve unlu mamullerde, tara gam ürünün kupkuru olmasini engelleyerek, yumusakligi gelistirir ve ekmek içinin süngerimsi yapisini saglar. Böylece ürünlerin raf ömrünü uzatir.
Keçiboynuzu gami yerine kullanilir. Bazi ürün gruplarinda -25 oraninda daha az kullanimi ürünlere kivam vermeye yettigi için, tara gami kullanmak, daha ekonomiktir.
Sodyum aljinat (E401) yerine alternatif kullanimi vardir.
Tara gam dondurmalarda kivamlastirici olarak diger kivamlastirici çesitleriyle birlikte kullanilir ve dondurmanin yumusak kivamini verir.
Tara gam donmus tatlilarda yagsi yapi (agizda tereyagi tadi verir) saglayarak ürünlere kivam verir. Ayrica sicaklik degisimine karsi dayaniklilik saglar. Ayrica ürünlerde seker ve buz kristallerinin olusumunu ve aromanin kaybini engeller.
Ksantan gam ile birlikte kullanildiginda uzun ömürlü süspansiyonlar olusturur. Bu karisim salata soslarinda, hardal, ketçap ve mayonez gibi ürünlerde kullanildiginda ürünlerin kaliciligini ve kivamlarini arttirir.
Et ürünlerinde kristallesmeyi ve büzüsmeye bagli su kaybini engeller. Ürünlerde su tutucu, isiya dayanikli, donmaya ve çözülmeye dayanikli etmen olarak görev yapar ve ürünlerin lezzetini degistirmeden korur.
Ayrica çesitli süt ürünlerinde ve içeceklerde tara gam kullanimi vardir.
