Trisodium citrate has the best emulsifying properties.
It is slightly alkaline and has buffering, complexing (Ca binding), and protein-solubilizing properties.
It also gives a characteristic flavor to processed cheese.
Citrates are very easily soluble in water and have excellent protein-solubilizing properties.
However, their softening and leavening properties for cheese dough are weak.
Their creaming properties are not good it is difficult to produce a spreadable processed cheese using only citrates.
For this reason, they are mostly used in the production of block-type processed cheeses, that is, sliceable processed cheeses.
