Olea europaea L. is the only species whose fruits can be consumed and is divided into two subspecies: Olea europaea subsp. sativa (cultivated olive) and Olea europaea subsp. sylvestris (wild olive) (Türkay, 2010).
Olive oil is an important, naturally edible plant-based oil obtained mechanically from the ripe fruits of the olive tree without any chemical treatments.
