Malaysia is the home of some very distinguished laksa and Penang Assam Laksa (or Penang Asam Laksa - "Asam" with a single "s") is a favorite among Malaysians. While laksa is most commonly served with a curry soup base, Penang Assam Laksa originating from the state of Penang in Peninsular Malaysia is served in a soup base flavored with tamarind and hence the name Assam Laksa, which directly translates to Tamarind Laksa (assam or asam is the Malay word for Tamarind). INGREDIENTS Rice, Sago Starch, Tapioca Starch, Corn StarchThe soup base is made with lemongrass, turmeric, chili, and galangal among many other herbs, not forgetting tamarind, which gives the soup a sour taste (the main distinguishing characteristic of Penang Assam Laksa Noodle Soup). Penang Assam Laksa Noodles are commonly served with mackerel (poached and scaled), julienned fresh cucumber, and tiny pineapple slices in the tamarind soup base, then garnished with spearmint, Vietnamese mint, and sliced blowtorch ginger flower.
