If apple concentrate is exposed to high heat, that is, it burns and the fruit sugar inside undergoes a Maillard reaction, forming HMF (hydroxymethylfurfural). This is how it loses its nutrients. Organic apple juice, produced as mentioned above, should not be cloudy.
