About Chipotle Chiles and Recipes

A Chipotle pepper is a dry, smoked jalapeno pepper. They are added to any dish that needs a smoky flavor with a little kick. Most of the natural 'heat' of the jalapeno is retained in the drying and smoking process. Typically it is about 5,000 to 10,000 Scoville Units

Chipotles are used in many authentic Mexican dishes as well as being added to Salsas, Chili, Meats, Soups, Stews & BBQ. Chipotles, often a key ingredient in a recipe, impart a relatively mild but earthy spiciness to many dishes in Mexican cuisine. The chiles are used to make various salsas. Chipotle can be ground and combined with other spices to make a meat marinade – adobo. Chipotle is used, typically in powdered form, as an ingredient in both homemade and commercial products, including some brands of barbecue sauce and hot sauce, as well as in some chiles and stews.

Fresh Chipotle Salsa

  • 2 Pounds Tomatoes roughly chopped
  • 1 ½ Pealed Onions cut in to ½ inch Slices
  • 1 Head of Garlic
  • 15 El Molcajete Brand Chipotle Chiles
  • 3 Tbl. Olive oil
  • ½ Cup Lime Juice
  • Toast, Clean and Re-Hydrate the Chiles
  • Toast the Garlic and Onion in the same pan as the chiles
  • Add all ingredients to a blender, Pulse until you reach the desired consistency. You may need to add a little of the soaking water from the chiles to blend properly.
  • Heat a frying pan to hot, pour the blended mixture in the hot pan and cook for 5 to 10 minutes.
  • Cool and serve
